My basil this year, despite the lack of green tint to my thumb, is actually doing well! I couldn't wait to use it in some sort of dish. Pesto was the first thing that came to mind and I made it full of garlic. Let's just say, I don't think I will be bothered by vampires tonight!
3 cups of packed fresh basil leaves
4 cloves of garlic
3/4 cup parmesan cheese
1/2 cup Garlic Olive Oil
1/4 cup chopped pine nuts
1/2 cup chopped parsley (optional)
Combine garlic, parmesan cheese, olive oil, and nuts in the bowl of a food processor or blender. Blend to a smooth paste. Add parsley if desired.
Again, I used the Garlic Olive Oil, but you can use any Dove Olive Oil that your choose.
