Slow Cooked Sweet and Sassy Pork

The smokiness from the paprika and Dove Chipotle Extra Virgin Olive Oil give this pork dish a fabulous flavor.

Slow Cooked Sweet and Sassy Pork

Ingredients:


Directions:

  1. Heat about 1 tbs Dove Chipotle EVOO in sauté pan. Add pancetta, onion and garlic. Cook until pancetta is crispy.
  2. While pancetta is cooking, combine smoked paprika, salt and pepper in small bowl. Rub seasoning onto pork.
  3. Remove pancetta mixture from pan and set aside.
  4. Add another tbs Dove Chipotle EVOO to pan and reheat. Add pork and brown on all sides.
  5. Place potatoes in the bottom of slow cooker. Place meat on top of potatoes.
  6. In blender, processor or with immersion blender, mix broth with jam. Pour broth mixture over pork. Add chilies.
  7. Cover and cook on high-heat setting for 3-1/2 to 4-1/2 hours, adding pancetta mixture during the last 30 min of cooking.
  8. Transfer pork to serving platter.
  9. Using slotted spoon, transfer sweet potatoes to lg bowl and mash; transfer some of the pancetta, too.
  10. Strain cooking liquid, skimming fat. Measure 2 c of the cooker broth, add additional vegetable broth if needed. Add liquid to med saucepan. Add cornstarch and whisk to combine. Cook over med heat until thickened, stirring often.
  11. Serve sauce with pork and mashed sweet potatoes.
